Kimbie is 3 days past her due date and we were hoping Aquababy would decide today would be the day! We all got so excited when she was having contractions and went to the hospital. But alas, it was a false alarm. How sweet would it be to be born on Valentine’s Day?!
Speaking of sweet things, I whipped up these healthier “sugar” cookies for the occasion. They taste just like your typical sugar cookies but without all the sugar and most of the butter. I substituted white sugar with organic blue agave nectar and added coconut oil instead of all the butter most recipes call for.
They turned out moist, chewy and just sweet enough to add a light coat of frosting and sprinkles, which are not sugar-free, but you can afford them since there is no sugar in this recipe!
