Roasted Beet and Orange Salad with Feta

Life’s Simple Pleasures.

We live for days like these…waking up late to the smell of fresh brewed Kona coffee followed by two hours of surfing perfect, glassy waves sans crowd, then indulging in an easy to make salad with gourmet flavor. 

This salad is so simple, yet looks and taste like something you would order at a five star resort or restaurant.  Roasted beets mixed with sweet navel oranges tossed in a raspberry vinaigrette and topped with light crumbled feta and walnuts has an impressive presentation and is simply delicious! I could eat this for days.

Roasted Beet and Orange Salad with Feta

Cook Time: 1 hour

Total Time: 1 hour, 15 minutes

Yield: 6-8 servings

Ingredients

  • 8 oz. mixed organic salad greens (arugula, lettuces, mizuna, radicchio, endive)
  • 9 organic beets (red and yellow), roasted and diced
  • 6 organic cherry tomatoes, diced
  • 3 organic navel oranges, sliced and peeled
  • 1/2 c walnuts, roasted and chopped
  • 4 oz. light crumbled feta cheese
  • raspberry vinaigrette, to taste
  • coconut oil spray

Instructions

  1. Preheat oven to 375 degrees F
  2. Wash and cut off beet greens and save in a separate bowl
  3. Place beets on a casserole dish, spray with coconut oil
  4. Cover and bake for 1 hour or until you can slice beets without resistance
  5. Meanwhile, on a nonstick cookie sheet spread out walnuts and spray with coconut oil and place in oven with beets for 6 minutes until brown and toasted
  6. Once beets are cooked, place in cold water and remove skin
  7. Dice beets and toss with the remaining ingredients

Sautee beet greens with garlic, oil and oranges on medium high heat for several minutes until leaves are tender. This is another great side dish with a lovely flavor!
