Roasted Broccoli and Onion

Kimberley here. I have a confession.  I dislike..no I detest broccoli.  I blame it on Mama Sita forcing me to eat it as a child.  (Note to self: Do not force Aquababy  to eat broccoli). In fact, I can’t even eat it raw as it upsets my stomach.  TMI?  So why, oh why would I post about broccoli.  Well because my brain knows it’s good for me and the husband loves it.  We also used to get quite a bit from our CSA in Colorado.  So what else is one to do beside come up with yummy, ‘Kimberley proof’ broccoli recipes and I find that roasting vegetables brings out their natural sweetness.

Roasted Broccoli and Onion

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 4 servings

Ingredients

  • 2 heads of organic broccoli
  • 1 small to medium sweet Maui onion
  • 2 cloves of garlic
  • 1 organic sesame oil
  • 2 Hawaiian chili peppers or red Thai chili peppers (optional)

Instructions

  1. Preheat oven to 425 degrees F.
  2. Cut broccoli into spears
  3. Cut onion in to thin slices.
  4. Mince chili peppers and garlic
  5. Toss in seseame oil in a casserole dish and bake for 20 minutes.
