Kimberley here. I have a confession. I dislike..no I detest broccoli. I blame it on Mama Sita forcing me to eat it as a child. (Note to self: Do not force Aquababy to eat broccoli). In fact, I can’t even eat it raw as it upsets my stomach. TMI? So why, oh why would I post about broccoli. Well because my brain knows it’s good for me and the husband loves it. We also used to get quite a bit from our CSA in Colorado. So what else is one to do beside come up with yummy, ‘Kimberley proof’ broccoli recipes and I find that roasting vegetables brings out their natural sweetness.
Super Food Ingredient: Broccoli
- Broccoli is high in vitamins C, K, A, folic acid and dietary fiber. It is also rich in phosphorus, potassium, magnesium and vitamins B6 and E. Broccoli contains anti-inflammatory nutrients, antioxidant nutrients, detox-support nutrients and anti cancer nutrients. It’s also known to lower cholesterol.
