Kimberley here. I have a confession. I dislike..no I detest broccoli. I blame it on Mama Sita forcing me to eat it as a child. (Note to self: Do not force Aquababy to eat broccoli). In fact, I can’t even eat it raw as it upsets my stomach. TMI? So why, oh why would I post about broccoli. Well because my brain knows it’s good for me and the husband loves it. We also used to get quite a bit from our CSA in Colorado. So what else is one to do beside come up with yummy, ‘Kimberley proof’ broccoli recipes and I find that roasting vegetables brings out their natural sweetness.
Ingredients
- 2 heads of organic broccoli
- 1 small to medium sweet Maui onion
- 2 cloves of garlic
- 1 organic sesame oil
- 2 Hawaiian chili peppers or red Thai chili peppers (optional)
Instructions
- Preheat oven to 425 degrees F.
- Cut broccoli into spears
- Cut onion in to thin slices.
- Mince chili peppers and garlic
- Toss in seseame oil in a casserole dish and bake for 20 minutes.
